Liquid forms can be drizzled over the dish, while those with a darker consistency are served next to the plate. Sauces used in cold dishes should also be cold. The foundation of the sauce is a kind of liquid. This liquid can be milk, vinegar, juice. These liquids can then be given consistency with additional substances such as flour, oil, cream. Sauces are always prepared separately from the meal and are complementary in terms of flavor, appearance of the dish in which they are used together. The amount of sauce should be well adjusted so that it does not interfere with the food, does not cover the taste and reveals more images and tastes. Sauces are an indispensable part of food. There are many types of sauces that can appeal to every taste. Sauces can be made ready to serve by whisking, mixing, cooking methods. There are five basic sauces in French cuisine. These are: béchamel sauce, Veloute sauce, Espagnole sauce, Hollandaise sauce and tomato sauce.

Quince Sour Sauce (Dressing)

Sour Quince is broken down, a little water is added and boiled and the sediment is filtered. In this way, quınce juice is obtained. Boil again over a wood fire until the juice becomes a consistency. In salads, it can be preferred next to grilled meats.

Dobipa Sauce

It is a delicious sauce consisting of tomatoes, peppers, eggplants. It is especially preferred next to meat and rice dishes.

Tomato sauce

It's one of the most popular sauces. The sauce, which is based on Tomatoes, is prepared with various spices, flavoring waters and additional products. It can also be made from canned tomatoes, but better results are achieved when the tomato is made using fresh ones when it is suitable for the season. Pasta is one of the most commonly used dishes. This sauce can also be preferred in poultry and red meat dishes.

Hot Pepper Sauce

The peppers are prepared by blending them with vinegar. Hot pepper sauce, especially used in meat dishes, adds a separate flavor to the meat. It is also preferred in pasta and salad varieties.

Breakfast Sauce

Another known name is acuka. It is a taste that is a gift to our country from Balkan cuisine. It contains plenty of walnuts and nuts and decorates our breakfast tables. It is preferred on toast, grissinis, canapés.
